I track both because when it comes to total weight lifted stats, it's going to be more accurate. How am I supposed to know how many pumpkins I've actually lifted if I only do one dumbbell??

common practice is to track the weight of one dumbbell. but it is up to you, as long as you stay consistent, it doesn't matter.
If I move both dumbbells, I track the weight off one. if I hold a dumbbell in each arm for Bulgarian Split Squats, for example, I track the combined weight.
